2lb Boneless skinless chicken breast
1 can mandarin orange slices
1pt fresh strawberries
1Lg red onion,
1/4c grated parmesan cheese
1c bread crumbs
1egg
5oz baby arugula
1C honey
1/3c Extra Virgin Olive Oil
4T strawberry vinigar
1c flour
Start by trimming the chicken of any fat and pound the chicken to about 1/2 inch thick than set aside. Now make a breading station start with 3 containers: mix the bread crumbs,parmesan cheese in 1st container,wisk egg in the 2nd and flour in the 3rd take each chicken breast and dip into the flour then egg and then coat them with breadcrumbs. In a large non-stick frying pan pour about 5 Tablespoons of the oil , heat for about 2 min until ready to fry. Place chicken into the oil and saute about 6 mins. per side until internal temp reaches 160 degrees pull from heat and let rest.
Slice Onions and strawberry's and drain the oranges mix all 3 with the Arugula. In a blender combine the honey, strawberry vinegar and rest of the oil.
Place the salad on a plate top with sliced chicken and drizzle vinaigrette over that and enjoy serves 4 to 6 people total time about 1 hour start to finish
